  • 8 ounces spinach
  • 8 ounces tofu
  • 4 ounces onions
  • 2 ounces garlic
  • 4 ounces red peppers
  • 4 ounces shiitake mushrooms
  • 1 tablespoon ground pepper
  • 1 tablespoon nutmeg
  • 1 tablespoon lemon juice

Directions

    Saute onion, garlic, red pepper, and mushrooms.

    Drain and cut up spinach.

    Crumble and drain tofu.

    Blend all ingredients.

    Smooth into a pie pan, or fill a large muffin tin for individual pies.

    Bake at 350 degrees for about one hour.
