- 8 ounces spinach
- 8 ounces tofu
- 4 ounces onions
- 2 ounces garlic
- 4 ounces red peppers
- 4 ounces shiitake mushrooms
- 1 tablespoon ground pepper
- 1 tablespoon nutmeg
- 1 tablespoon lemon juice
Directions

1Saute onion, garlic, red pepper, and mushrooms.

2Drain and cut up spinach.

3Crumble and drain tofu.

4Blend all ingredients.

5Smooth into a pie pan, or fill a large muffin tin for individual pies.

6Bake at 350 degrees for about one hour.
