Spinach Pie

  • 1 (9-inch) pie shell (frozen deep dish)
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1/4 c. finely chopped onion
  • 1 c. (4 oz.) shredded Swiss cheese
  • grated Parmesan cheese
  • 3 eggs
  • 2/3 c. evaporated milk
  • 1/8 tsp. salt
  • cayenne pepper

    Prick pie shell with fork.

    Bake pie shell in conventional oven until golden brown.

    In 1-quart microwave-safe dish, cook spinach, covered with plastic wrap.

    Cook on High for 6 minutes, stirring 1 time.

    Drain thoroughly.

    Layer half spinach mixture and cheese in bottom of pie shell.

    Repeat layers.

    Beat together eggs, milk, salt, nutmeg and cayenne pepper.

    Pour over spinach mixture. Sprinkle with Parmesan cheese.

    Bake at 350° for 15 to 20 minutes. Let stand 10 minutes before serving.
