Spinach Pie

- 1 large onion, chopped
- 2 slices dry white bread, soaked in a little milk
- 8 eggs
- 1 c. chopped spinach
- 1/4 c. Parmesan cheese
Directions

1Cook onion slowly until light brown in nonstick frypan.

2Add chopped spinach; if frozen, cook a few minutes.

3Add bread; squeeze and crumble.

4Beat eggs slightly.

5Add to mixture with cheese.

6Cook in a well-oiled frypan slowly (as for scrambled eggs).

7When dry, put mixture in a nonstick frypan and cook on top of stove slowly.

8When a brown crust forms, turn over and cook other side. (Place a plate on pie and turn mixture over.

9Slowly put back in pan to cook other side.)
