  • 3 oz. cream cheese
  • 10 oz. frozen chopped spinach
  • 1 1/2 c. half and half
  • 1/4 c. grated Parmesan cheese
  • 1/2 c. wheat germ
  • 2 eggs
  • 1 tsp. salt
  • 1/2 tsp. crushed tarragon
  • 1/2 tsp. crushed marjoram
  • 1 chopped onion
  • 2 Tbsp. butter
  • 1/4 lb. chopped mushrooms
  • 9-inch pie shell

Directions

    Soften cream cheese at room temperature.

    Thaw spinach. Squeeze dry.

    Beat cream cheese and half and half gradually.

    Stir in Parmesan cheese, eggs, spinach, wheat germ and spices.

    Saute onions and mushrooms in butter and add to mixture.

    Pour into shell and bake at 375° to 400° for 35 to 45 minutes.

    Can be kept refrigerated for 24 hours until ready to bake.
