- 1 (10 oz.) pkg. frozen spinach, cooked and drained
- 2 eggs, slightly beaten
- 1 c. cottage cheese (low-fat)
- 1/2 to 1 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. grated Parmesan cheese
- chives (optional)
Directions

1Preheat oven to 325°.

2Mix egg, cottage cheese, salt and pepper, then add to spinach.

3Spoon mixture into an 8-inch pie pan. May add chives.

4Sprinkle cheese on top, then bake 30 minutes. Makes 4 servings, 165 calories each.
