- 8 slices bacon
- 1 to 1 1/2 lb. beef flank steak
- 1 (10 oz.) pkg. frozen spinach, thawed and well drained
- 1/4 c. grated Parmesan cheese
Directions

1In a large skillet, cook bacon until done but not crisp; drain on paper towels.

2Score steak by making shallow cuts at 1-inch intervals diagonally across steak in a diamond pattern.

3Repeat on second side.

4With a meat mallet, pound steak into a 12 x 8-inch rectangle.

5Sprinkle with salt and pepper.

6Arrange bacon lengthwise on steak.

7Spread spinach over bacon.

8Sprinkle with Parmesan cheese.

9Roll meat from a short side (like a jelly roll). Secure with toothpicks at 1-inch intervals, starting 1/2 inch from end.

10Grill for a minimum of 20 minutes.

11Serve with a Hollandaise Sauce.
