  • 2 (10 oz.) pkg. frozen chopped spinach, thawed, drained or fresh chopped spinach
  • 2 c. cottage cheese, drained
  • 1 tsp. salt
  • 1/3 c. grated Parmesan cheese
  • 2 eggs

Directions

    Mix spinach, cottage cheese, salt, Parmesan and eggs until well blended.

    Pour into greased 1-quart casserole.

    Bake at 350° about 30 minutes.

    Let sit a little after coming out of oven to meld juices.

    Makes about 6 servings.
