Spinach Quiche

  • 2 frozen unbaked pie shells
  • 1 small pkg. frozen chopped spinach, thawed and well drained
  • 4 eggs
  • 1 1/4 c. milk
  • dash of Worcestershire
  • 1/4 c. chopped onion or 1 Tbsp. onion flakes
  • 1 c. shredded Mozzarella
  • 1 c. shredded Cheddar cheese
  • 1 c. shredded Swiss cheese

Directions

    Thaw spinach; drain well by squeezing water out with hands. Divide spinach equally into bottom of two unbaked pie shells. Sprinkle 1/2 cup of each cheese (Mozzarella, Cheddar, Swiss) into each pie shell.

    Mix eggs, milk, Worcestershire sauce and onions with wire whisk in a bowl.

    Pour egg mixture evenly into pie shells.

    Bake at 450° for 10 minutes.

    Reduce heat to 350° and bake for an additional 15 minutes.

    Let cool 10 minutes before cutting.
