Spinach Quiche

  • 1 (9 inch) unbaked pie shell
  • 1 small onion, chopped
  • 2 Tbsp butter, melted
  • 5 slices bacon, fried and crumbled
  • 1 (10 oz) pkg frozen chopped spinach, thawed
  • 1 tsp salt
  • 1/4 cup flour
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg
  • 2 eggs, beaten
  • 1 cup half and half
  • 2 Tbsp grated Parmesan - use fresh
  • 1/2 lb shredded Swiss cheese

Directions

    Bake pie shell at 400° for 5 minutes.

    Set aside.

    Saute onion and bacon in butter just until coated.

    Add spinach, stirring well. Cook 2 minutes.

    Add flour, salt, pepper, and nutmeg, mixing well. Combine eggs, half and half, and cheese.

    Beat well.

    Stir into spinach mixture.

    Pour into pie shell and bake at 400° for 35 minutes or until top is golden and center is set.
