- 1 (9 inch) unbaked pie shell
- 1 small onion, chopped
- 2 Tbsp butter, melted
- 5 slices bacon, fried and crumbled
- 1 (10 oz) pkg frozen chopped spinach, thawed
- 1 tsp salt
- 1/4 cup flour
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 2 eggs, beaten
- 1 cup half and half
- 2 Tbsp grated Parmesan - use fresh
- 1/2 lb shredded Swiss cheese
Directions

1Bake pie shell at 400° for 5 minutes.

2Set aside.

3Saute onion and bacon in butter just until coated.

4Add spinach, stirring well. Cook 2 minutes.

5Add flour, salt, pepper, and nutmeg, mixing well. Combine eggs, half and half, and cheese.

6Beat well.

7Stir into spinach mixture.

8Pour into pie shell and bake at 400° for 35 minutes or until top is golden and center is set.
