  • 1 (8-inch) pie crust
  • 1/2 pkg. spinach
  • 1/2 pkg. mushrooms, cut up
  • 1/4 c. onion, chopped
  • 1 Tbsp. parsley
  • 2 eggs
  • 1/2 c. mayonnaise
  • 1/3 c. milk
  • pinch of dill weed
  • pinch of basil
  • 1 1/2 c. grated Cheddar cheese

Directions

    Bake pie crust until light brown.

    Steam spinach, mushrooms and onion.

    Drain well and set aside.

    Mix eggs, mayonnaise, dill weed, basil and parsley.

    Add Cheddar cheese.

    Spread steamed vegetables into crust.

    Pour egg mixture over top of vegetables. Bake at 350° for 25 minutes.
