Spinach Rice

  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 cup cooked rice
  • 1 cup shredded sharp cheddar cheese
  • 12 cup minced onion
  • 14 cup milk, plus
  • 2 tablespoons milk
  • 2 eggs, beaten
  • 12 teaspoon dried thyme
  • 12 teaspoon dried rosemary
  • 12 teaspoon Worcestershire sauce
  • 18 teaspoon salt (to taste)
  • 18 teaspoon pepper (to taste)
  • 1 tablespoon butter or 1 tablespoon margarine

Directions

    Drain thawed spinach, and squeeze out excess water (I use kitchen towels for this).

    Combine spinach and the remaining ingredients except butter; mix well.

    Transfer mixture to a greased 1 quart casserole; dot with butter.

    Bake in a preheated 350 oven for 25-30 minutes, until well heated.
