  • 1 1/2 c. skim milk
  • 1 pkg. frozen spinach (in a pouch), thawed and squeezed to drain
  • 1 c. uncooked instant rice or brown rice
  • 2 oz. (1/2 c.) shredded Swiss cheese
  • 2 Tbsp. finely chopped onion
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 Tbsp. fresh lemon juice
  • 2 eggs, beaten

    Heat oven to 350°. Spray 9-inch pie pan with nonstick cooking spray. In large saucepan, heat milk until very hot but not boiling. Add all remaining ingredients; mix well. Pour into sprayed pan. Bake at 350° for 25 to 35 minutes or until knife inserted in center comes out clean.
