Spinach Ricotta Pie

Ingredients
- 1 (8 or 9-inch) pie shell
- 1 Tbsp. butter
- 1 c. minced onion
- 3/8 c. Parmesan cheese
- 1 pkg. (10 oz.) frozen chopped spinach, thawed
- 1 (15 oz.) container reduced fat Ricotta cheese
- 2 eggs
- pepper to taste
- 1/4 tsp. nutmeg
Directions

1Preheat oven to 350°.

2Bake pie shell, until lightly browned. Drain spinach and set aside.

3Melt butter in saute pan and saute onion until translucent.

4Stir spinach into onion and heat through.

5Mix all other ingredients in large bowl.

6Add spinach mixture and stir until mixture looks like green and white marble. Pour into shell and bake 45 to 55 minutes or until top is golden and set.

7Serves 4.

8Add salad and fresh bread and you have a great lunch or dinner.
