Spinach Ricotta Pie

Ingredients

  • 1 (8 or 9-inch) pie shell
  • 1 Tbsp. butter
  • 1 c. minced onion
  • 3/8 c. Parmesan cheese
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed
  • 1 (15 oz.) container reduced fat Ricotta cheese
  • 2 eggs
  • pepper to taste
  • 1/4 tsp. nutmeg

Directions

    Preheat oven to 350°.

    Bake pie shell, until lightly browned. Drain spinach and set aside.

    Melt butter in saute pan and saute onion until translucent.

    Stir spinach into onion and heat through.

    Mix all other ingredients in large bowl.

    Add spinach mixture and stir until mixture looks like green and white marble. Pour into shell and bake 45 to 55 minutes or until top is golden and set.

    Serves 4.

    Add salad and fresh bread and you have a great lunch or dinner.
