Spinach Roll-Ups

Ingredients

  • 2 c. shredded Mozzarella
  • 3/4 c. Ricotta cheese
  • 3/4 c. grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 c. margarine or butter
  • 1/4 c. flour
  • 1 c. milk
  • 1 c. light cream or half and half
  • 8 to 10 lasagna noodles, cooked and cooled
  • 3 Tbsp. butter
  • 1 red pepper, finely chopped
  • 1/2 c. chopped onion
  • 2 pkg. frozen spinach, chopped, squeezed and sauteed briefly in butter
  • salt and pepper to taste

    Preheat oven to 375°.

    Saute onion and pepper in 3 tablespoons butter until tender.

    Add spinach mixture.

    Combine spinach, onion and pepper with 1 1/2 cups Mozzarella, Ricotta, 1/2 cup Parmesan and egg.

    Set aside.

    Melt 1/4 cup butter; stir in flour, milk, cream and remaining Parmesan cheese.

    Bring to a boil, stirring constantly, until thick.

    Set aside.

    Spread spinach mixture over a cooked, dried noodle and roll up.

    Continue until all mixture is used up.

    Spread a small amount of cheese sauce in an 8 x 10-inch baking dish.

    Place rolls in dish; pour over remaining sauce and bake 40 to 50 minutes or until bubbly.
