Ingredients

  • 2 pkg. (10 oz. each) frozen, chopped spinach, cooked according to directions and drained well
  • 2 c. one-step chicken flavored stuffing mix
  • 1 c. grated Parmesan cheese
  • 6 large eggs, lightly beaten
  • 3/4 c. (1 1/2 sticks) butter
  • 1/2 tsp. salt
  • pepper to taste

Directions

    Mix all ingredients in a large bowl until well blended.

    Roll level tablespoonfuls of mixture into balls (makes about 60). Arrange them on cookie sheet (with sides is best), close but not touching.

    At this point, they can either be frozen and put in a gallon Ziploc bag or cooked in 350° oven for 15 to 20 minutes until firm.
