- 1 c. white rice
- 2 Tbsp. olive oil
- 1 c. chopped onion
- 1 Tbsp. minced garlic
- 4 c. chicken broth
- 2 c. fresh chopped spinach
- 3 tsp. chives or 3 Tbsp. fresh
- 1 tsp. thyme
- salt and pepper
- 1/2 c. Parmesan
Directions

1Heat oil in saucepan.

2Add onion and garlic.

3Cook on low. Simmer 5 minutes.

4Add rice; stir another 3 minutes.

5In a separate pan bring broth to a boil.

6Slowly add 1 cup broth to 1 cup rice, then add spinach and thyme.

7Add rest of broth.

8Stir and add salt, pepper and Parmesan cheese.

9The rice should be cooking a total of 25 to 30 minutes.
