Spinach Salad

Ingredients

  • 1 lb. fresh spinach
  • 1/2 c. oil
  • 1/4 c. sugar
  • 3 Tbsp. vinegar
  • 1 tsp. finely grated onion
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 6 slices bacon, cooked crisp, drained and crumbled
  • 5 hard-cooked eggs or less, sliced

Directions

    Wash and drain spinach.

    If too large, tear into pieces. Combine oil, sugar, vinegar, onion, salt and mustard.

    Beat in blender until dressing becomes thick and syrupy.

    Pour over spinach, bacon and eggs.

    Let stand about 1/2 hour.

    (For convenience, prepare dressing ahead and refrigerate.)
