- 1 1/2 to 2 lb. fresh spinach
- 6 slices bacon
- 4 hard-boiled eggs, chopped
- 1 medium red onion, diced
- 1 (5 oz.) can water chestnuts, drained
- 1 c. bean sprouts, drained
Directions

1Wash spinach well and break into large bite-size pieces.

2Add onion, eggs, bean sprouts and water chestnuts.

3Fry bacon until crisp and crumble on top just before serving.
