  • 1 lb. spinach (fresh)
  • 1/2 c. salad oil
  • 1/4 c. sugar
  • 2 tsp. vinegar
  • 1 tsp. onion, finely grated
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 6 slices bacon, fry, drain and crumble
  • 6 eggs, hard-boiled and chopped

Directions

    Wash spinach in lukewarm water; drain, then chill.

    Combine oil, sugar, vinegar, onion, salt and mustard.

    Blend until thick and syrupy.

    Tear spinach into bite-size portions and place in a bowl.

    Add bacon and eggs; pour dressing over all and let stand.
