Spinach Salad

Ingredients

  • 10 to 12 ounces Spinach
  • 1/4 cup sugar (most recipes call for double that amount)
  • 1/2 cup apple cider vinegar
  • 2 teasp chopped sweet or purple onion
  • 1/2 teasp dry mustard
  • 1/2 teasp salt
  • 1/4 vegetable oil (could use olive I think)
  • 3/4 cup finely chopped apple
  • 1 small bag sugared pecans and cranberries

Directions

    Wash spinach and let dry.

    Blend sugar, vinegar, onion, mustard, salt, oil.

    Then add chopped apple and pulse a few times. The apple can remain chunky.

    Refrigerate spinach and dressing separately until serving time.

    When ready to serve pour dressing over spinach and toss.

    Sprinkle with the pecan-cranberry mix/
