Spinach Salad Ring

  • 1 pkg. lemon gelatin
  • 3/4 c. hot water
  • 1 Tbsp. vinegar
  • 1 c. mayonnaise
  • 1 c. cottage cheese
  • 1 pkg. chopped frozen spinach
  • 1/3 c. celery, finely chopped
  • 1/3 c. onion, finely chopped

Directions

    Dissolve gelatin in water; add vinegar and mayonnaise.

    When cool, beat.

    Cook and cool spinach, drain well.

    Add celery, onions, cheese and spinach to gelatin.

    Put into a 6-cup mold (or 9 x 12-inch doubled recipe).

    Chill until firm.
