Spinach Salad(Serves 8)

Ingredients

  • 1 large pkg. fresh spinach, washed and stems removed, dry well with paper towel
  • 2 hard-boiled eggs, chopped fine
  • 2 cans drained water chestnuts, sliced
  • 8 slices bacon, cooked crisp and crumbled
  • 1 c. croutons (I make my own)
  • 1 c. cooking oil
  • 1/2 c. sugar
  • 1/2 c. vinegar (I like salad vinegar)
  • 1/2 c. catsup
  • 2 Tbsp. Worcestershire
  • 1/4 c. minced onion (dry is okay, but use 1/2 tsp.)

Directions

    Combine first 4 ingredients; chill well.

    Make dressing with remaining ingredients (except croutons); shake well to blend. Pour over greens, a little at a time and toss (it doesn't take all of the dressing for 1 salad).

    Add croutons just before serving. Serves 8.
