  • 1 c. butter, divided
  • 1 c. flour, divided
  • 1 qt. chicken stock
  • 1/2 lb. sliced mushrooms, sauteed
  • 1 c. heavy cream
  • 1 1/2 c. Grey Poupon Dijon mustard, divided
  • 1/2 lb. onion, chopped
  • 1 1/2 Tbsp. olive oil
  • 1 lb. frozen spinach, drained and chopped
  • 1/2 c. sour cream
  • 1 lb. smoked salmon, chopped
  • 1/4 tsp. nutmeg
  • 8 eggs, separated
  • 2 c. half and half
  • 1/2 c. Cheddar cheese, shredded

    In a heavy bottom saucepan, melt 1/2 cup of butter.

    Add 1/2 cup of flour.

    Cook 5 minutes.

    Add chicken stock and simmer for 30 minutes, stirring often.

    Strain and add sauteed mushrooms, heavy cream and 1 cup of Dijon mustard; simmer for 5 minutes. Season with salt and pepper and hold for service.
