- 1 c. butter, divided
- 1 c. flour, divided
- 1 qt. chicken stock
- 1/2 lb. sliced mushrooms, sauteed
- 1 c. heavy cream
- 1 1/2 c. Grey Poupon Dijon mustard, divided
- 1/2 lb. onion, chopped
- 1 1/2 Tbsp. olive oil
- 1 lb. frozen spinach, drained and chopped
- 1/2 c. sour cream
- 1 lb. smoked salmon, chopped
- 1/4 tsp. nutmeg
- 8 eggs, separated
- 2 c. half and half
- 1/2 c. Cheddar cheese, shredded
Directions

1In a heavy bottom saucepan, melt 1/2 cup of butter.

2Add 1/2 cup of flour.

3Cook 5 minutes.

4Add chicken stock and simmer for 30 minutes, stirring often.

5Strain and add sauteed mushrooms, heavy cream and 1 cup of Dijon mustard; simmer for 5 minutes. Season with salt and pepper and hold for service.
