- 2 c. cottage cheese (16 oz. container)
- 3 eggs, beaten
- 3 pkg. frozen spinach, thawed and drained
- 1 1/2 c. shredded Cheddar cheese
- 1 large can sliced mushrooms
- 1/2 tsp. salt
- 3 to 4 dashes nutmeg
Directions

1In a large bowl, mix cottage cheese and eggs.

2Add spinach, Cheddar cheese, mushrooms, salt and nutmeg.

3Cover and chill overnight.

4(If you wish, you can bake and serve the same day.) Next day, spoon into greased 9 x 13-inch pan.

5Bake at 350° until set, about 45 minutes.
