Ingredients
- 3 Tbsp. butter
- 2 Tbsp. finely chopped onion
- 3 Tbsp. flour
- 1/2 c. milk and 1/2 c. cream
- 4 beaten egg yolks
- 1 tsp. salt
- 1 tsp. pepper
- dash of nutmeg
- 1 c. grated Velveeta
- 1 c. chopped spinach (1 box frozen, drained)
- 4 eggs whites, beaten to peaks
Directions

1Melt butter.

2Add onion and cook 1 minute.

3Blend in flour. Stir milk and cream in slowly and continue to stir until smooth and it comes to a slow boil.

4Add a little cream sauce to beaten yolks.

5Mix well.

6Add yolks to cream sauce and cook 1 minute. Add seasoning, cheese and spinach.

7Fold in beaten egg whites. Set casserole in pan of water and bake at 325° for 40 minutes.
