  • 2 (10 oz.) pkg. frozen chopped spinach
  • 3 eggs
  • 1/2 stick melted butter
  • 3 Tbsp. flour
  • 1/4 lb. grated Brick cheese
  • 1/4 lb. grated Cheddar cheese
  • 1 lb. small curd cottage cheese
  • salt and pepper to taste

    Cook spinach to directions on box and squeeze out water.

    Beat eggs.

    Melt butter; stir in flour to make a smooth paste.

    Add beaten eggs.

    Mix well.

    Stir in spinach.

    Fold in cheeses, salt and pepper.

    Grease a 9 x 13-inch pan.

    Pour in mixture.

    Bake 30 minutes until bubbly in 350° oven for glass pan and 375° for metal pan.
