  • 2 pkg. frozen chopped spinach
  • 1/4 c. butter
  • 1/4 c. flour
  • 1 c. plus 1 Tbsp. milk
  • 2 eggs
  • 1 1/2 tsp. salt
  • dash of pepper
  • 1/2 Tbsp. sugar

Directions

    Thaw spinach. Make a white sauce. Melt butter. Blend in flour to make a smooth paste. Then stir in milk gradually, stirring constantly, until mixture is thick and smooth. Add well-beaten eggs, spinach, sugar, salt and pepper. Bake at 325° for 1 hour. Serves 8.
