- 2 (10 oz.) pkg. fresh spinach
- 4 Tbsp. soft butter or margarine
- 1 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 lb. shredded Cheddar cheese
- 3 eggs
- 1 c. milk
- 1/2 c. chopped onion
Directions

1Wash, cook and drain spinach well.

2In a large bowl, beat eggs. Add butter, flour, milk, salt and baking powder.

3Mix well.

4Stir in cheese, onion and spinach.

5Spoon mixture into greased 9 x 13-inch pan and level off.

6Bake at 350° for 35 minutes.

7Remove from oven and cool off for 45 minutes.

8Cut into bite size squares. These freeze well.

9Can defrost and reheat for 15 minutes or until hot.
