- 1 bunch washed spinach
- 1 pkg. hard tofu
- 1 jar spaghetti sauce
- 8 to 12 oz. Monterey Jack cheese
- 1 pkg. lasagne noodles
- 6 to 8 sliced fresh mushrooms
- 1/2 c. Parmesan cheese
- nonstick spray
Directions

1Cook noodles according package.

2Wash and cut spinach. Crumble tofu (drained first) into bowl.

3Put in Parmesan cheese and mix.

4Set aside.

5Cook spinach and mushrooms in skillet until just turning soft.
