Spinach-Tofu Lasagne

  • 1 bunch washed spinach
  • 1 pkg. hard tofu
  • 1 jar spaghetti sauce
  • 8 to 12 oz. Monterey Jack cheese
  • 1 pkg. lasagne noodles
  • 6 to 8 sliced fresh mushrooms
  • 1/2 c. Parmesan cheese
  • nonstick spray

Directions

    Cook noodles according package.

    Wash and cut spinach. Crumble tofu (drained first) into bowl.

    Put in Parmesan cheese and mix.

    Set aside.

    Cook spinach and mushrooms in skillet until just turning soft.
