- 1 pkg. fresh spinach
- 4 Tbsp. olive oil
- 2 tsp. minced garlic
- coarse salt
- 1/4 c. pine nuts, toasted
- 2 Tbsp. lemon juice
- freshly ground pepper
Directions

1Wash spinach and let dry.

2Heat oil in large saute pan over medium-low heat. Add garlic and saute about 30 seconds, stirring constantly. Raise heat to medium-high.

3Add spinach and salt. Saute, turning spinach with tongs for 25 seconds, until spinach just wilts. Reduce heat. Add pine nuts. Drizzle lemon juice and season with pepper.
