Spinach With Rice

  • 1 small onion, grated
  • 2 to 3 canned tomatoes, mashed
  • 2 Tbsp. olive oil
  • 1 (10 oz.) pkg. chopped frozen spinach
  • 1/4 tsp. pepper
  • 4 Tbsp. butter
  • 2 c. water
  • 1 tsp. salt
  • 1/2 c. uncooked rice

Directions

    In saucepan, saute onion in butter and olive oil.

    Add salt, pepper, tomatoes and water.

    Bring to a boil.

    Add spinach and rice.

    When spinach is separated, reduce heat to medium; stir well. Cover and simmer 15 minutes.
