Spinach With Rice

- 1 medium onion, finely chopped
- 3 Tbsp. olive oil
- 1 lb. fresh spinach, washed well and drained, or 2 pkg. (10 oz. each) frozen leaf spinach, partially thawed
- 1 Tbsp. tomato paste
- 1/4 c. water
- 2 Tbsp. long grain rice
- salt and pepper to taste
Directions

1In a saucepan, cook onion in olive oil until translucent.

2Add spinach.

3Mix tomato paste with water and add along with rice. Cover.

4Simmer until rice is tender, about 20 minutes.

5Season with salt and pepper.

6Makes 4 servings.
