Spinach With Rice

  • 1 medium onion, finely chopped
  • 3 Tbsp. olive oil
  • 1 lb. fresh spinach, washed well and drained, or 2 pkg. (10 oz. each) frozen leaf spinach, partially thawed
  • 1 Tbsp. tomato paste
  • 1/4 c. water
  • 2 Tbsp. long grain rice
  • salt and pepper to taste

Directions

    In a saucepan, cook onion in olive oil until translucent.

    Add spinach.

    Mix tomato paste with water and add along with rice. Cover.

    Simmer until rice is tender, about 20 minutes.

    Season with salt and pepper.

    Makes 4 servings.
