Spinach With Two Cheeses

- 2 (10 oz.) pkg. fresh or frozen spinach
- 5 Tbsp. butter or margarine
- 1 c. Ricotta or small curd cottage cheese
- 1 egg
- 3 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. ground nutmeg
- 3 Tbsp. grated Parmesan cheese
Directions

1Preheat oven to 425°.

2Trim and wash spinach.

3Do not dry. Place spinach in large pot with just water that clings to leaves. Cover and cook 5 minutes or until limp for fresh spinach or according to package for frozen spinach.

4Drain cooked spinach in colander, pressing out most of the liquid.

5Chop spinach fine.
