Split Pea Soup

  • 2 carrots, sliced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 1 (16 ounce) bag dried split peas
  • 1 bay leaf
  • 3 garlic cloves, minced
  • 5 cups chicken broth (more if needed while cooking)
  • 4 tablespoons extra virgin olive oil
  • salt and pepper

Directions

    Slice and saute all the vegetales in the olive oil in a large pot.

    Check through the split peas for pebbles and remove.

    Add split peas to the vegetables and saute for 3 minutes.

    Add bay leaf and the water.

    Simmer for about 2 1/2 hours until peas are soft.

    Adjust seasonings.
