  • 4 eggs
  • 2/3 c. water
  • 1 tsp. almond extract
  • 1 1/4 c. sugar
  • 1 1/2 c. cake flour (2 Tbsp. less if regular flour)
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt

    Separate eggs.

    Beat egg whites until frothy.

    Add cream of tartar and salt.

    Beat until stiff.

    Set aside.

    Add water, almond extract and yolks.

    Beat well with electric mixer.

    Add sugar, a little at a time, continuing to beat with mixer.

    Stir in flour with a spoon.

    Fold beaten whites into yolk mixture.

    Grease and flour tube cake pan.

    Bake 1 hour at 325°.
