  • 6 eggs
  • 1 c. sugar
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 tsp. grated lemon rind
  • 1 c. flour
  • 1/8 tsp. salt

Directions

    Beat egg whites very stiff and add 1/2 sugar.

    Beat egg yolks until thick and lemon color.

    Add remainder of sugar, lemon juice and rind; fold whites into yolk mixture.

    Sift flour and salt; fold into egg mixture.

    Bake in ungreased pan for 1 hour.

    First 15 minutes bake at 300°, gradually increase temperature to 350° for the last 45 minutes.
