- 9 eggs, separated
- 1/4 c. potato starch
- 3/4 cupcake meal
- 1 1/2 c. sugar
- 1/4 to 1/2 c. orange juice
- lemon
- pinch of salt
- lemon rind
Directions

1Preheat oven to 350°.

2Beat egg yolks and sugar until lemon color.

3Add cake meal, starch, lemon rind and juice.

4Beat egg whites until stiff.

5Fold into batter.

6Pour in ungreased 10-inch angel food pan.

7Sprinkle with sugar.

8Bake 1 hour until top is brown.

9Turn over onto platter.

10Cool completely before removing.
