- 2 c. corn meal (self-rising)
- 2 1/2 c. boiling water
- 1 1/2 Tbsp. butter
- 2 eggs, separated
- 1 1/2 c. milk
Directions

1Preheat oven to 400°.

2Beat egg whites until stiff peaks are formed.

3Into a large mixing bowl, put the corn meal and slowly add the boiling water, stirring continuously.

4Add butter, egg yolks and milk and stir or beat well.

5Fold egg whites into batter and pour into an 8 or 9-inch cake pan.

6Bake for 40 minutes at 400° or until done.

7As the bread will be very soft, it is traditionally served using a spoon.
