  • 2 c. corn meal
  • 2 1/2 c. boiling water
  • 2 Tbsp. melted fat
  • 2 eggs, separated
  • 1 1/2 c. buttermilk
  • 1 tsp. soda

Directions

    Stir corn meal gradually into boiling water. Let cool. Beat egg yolks and stir into cornmeal with fat and buttermilk in which the soda has been dissolved. Beat egg whites until stiff and add to mixture. Pour into a greased baking dish. Bake at 425° for 40 minutes.
