- 1 c. white or yellow corn meal
- 3 c. milk
- 2 Tbsp. butter
- 3 eggs, well beaten
- 1 Tbsp. sugar
- 1 1/2 tsp. salt
- 3 tsp. baking powder
Directions

1Preheat oven to 450°.

2Combine corn meal, shortening and 2 cups milk in heavy saucepan over medium heat.

3Heat until thickened, stirring constantly.

4Blend beaten eggs, salt and remaining milk.

5Gradually stir into cornmeal mixture and mix well.

6Add baking powder and stir well.
-
7Pour into well greased 2-quart casserole dish.

8Bake for 25 to 30 minutes.
