- 2 c. water
- 1 tsp. salt
- 1 c. white cornmeal
- 2 c. milk
- 2 eggs, lightly beaten
- 2 Tbsp. sugar
- butter
- salt and freshly ground black pepper
Directions

1Position rack in center of a 425° oven.

2Pour oil into a 2-quart souffle dish.

3Put dish in oven while preparing batter. Bring water and salt to a boil in a heavy large saucepan over medium heat.

4Gradually whisk in cornmeal and cook until thick, stirring constantly about 2 minutes.
