- 3 c. milk
- 1 1/4 c. white cornmeal
- 1 tsp. salt
- 3 eggs
- 2 Tbsp. butter
- 1 3/4 tsp. baking powder
Directions

1Stir meal into rapidly boiling milk.

2Cook until thick, stirring constantly; don't scorch.

3Remove from heat and allow to cool.

4Add well beaten eggs, salt, baking powder and butter; beat with electric mixer for 15 minutes.

5You might be tempted to cut this step short, but don't; this is really a souffle and it won't rise as well.

6Pour into well greased casserole.

7Bake 30 minutes at 375°.
