- 2 c. milk
- 1/2 c. corn meal (yellow or white)
- 1 Tbsp. butter
- 1 tsp. salt
- 1 tsp. sugar
- 3 eggs, separated
Directions

1Heat milk to scalding; add corn meal.

2Gradually add butter, salt and sugar.

3Cook over moderate heat, stirring constantly until thickened.

4Beat egg yolks until light.

5Add small amount of hot corn meal mixture and mix well.

6Add remaining hot mixture, stirring until well blended.

7Beat egg whites until stiff, but not dry.

8Fold into corn mixture.

9Pour into buttered 1 1/2-quart casserole.

10Bake in moderate oven at 375° for 45 minutes.

11Serve immediately with butter.

12Makes 4 to 5 servings.
