Spring Broccoli Soup

Ingredients

  • 1 bunch broccoli*
  • 4 Tbsp. butter
  • 3/4 c. chopped onion
  • 2 Tbsp. flour
  • 2 c. chicken broth
  • 1 1/4 tsp. Worcestershire sauce
  • 1 1/2 tsp. Tabasco sauce
  • 3/4 tsp. salt
  • 2 c. milk
  • 1 c. grated sharp Cheddar cheese
  • 1/4 c. chopped fresh parsley

Directions

    Cut broccoli into tiny florets.

    Cook in salted water until tender.

    Drain.

    Melt butter; add onion and saute until tender. Blend in flour and gradually add chicken broth, stirring all the while.

    Heat slowly until mixture boils.

    Add the Worcestershire sauce, Tabasco sauce, salt, broccoli and milk.

    Sprinkle in grated cheese.

    Stir until melted.

    Serve garnished with fresh parsley.
