Spring Vegetable Soup

Ingredients

  • 4 tablespoons olive oil
  • 2 onions medium, thinly sliced
  • 1 head green cabbage trimmed, thinly sliced
  • 3 carrots trimmed, thinly sliced
  • 3 medium potatoes peeled, sliced into strips
  • 3 1/2 ounces button mushrooms
  • 3 1/2 ounces shiitake mushrooms sliced
  • 4 cups vegetable stock
  • 3 tablespoons light soy sauce
  • 4 tablespoons creme fraiche
  • 2 tablespoons Asian chili sauce such as Sambal Oelek

Directions

    Heat olive oil in a saucepan over medium heat. Sweat onions for 2-3 mins, until translucent. Add cabbage, carrots, potatoes and mushrooms. Saute for 3-4 mins, stirring. Add stock and simmer for 8-10 mins. Add soy sauce and season.

    Distribute soup between 4 serving bowls. Add 1 tbsp creme fraiche and some chili sauce to each bowl. Serve.
