  • 1 1/2 lb. yellow squash, sliced thin
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 medium onions, diced
  • 2 eggs
  • 2 c. milk
  • 3 c. cornbread stuffing
  • 2 1/2 c. grated Cheddar cheese

Directions

    Reserve 1 cup stuffing and 1/2 cup cheese.

    Cook squash and onion until tender.

    Mix all ingredients.

    Pour into buttered casserole dish.
