Ingredients

  • 6 Tbsp. butter
  • 1 tsp. salt
  • 1 c. onions, chopped
  • 1 c. celery, chopped
  • 2 c. non-dairy creamer
  • 5 c. chicken broth
  • 2 potatoes, cubed
  • 2 medium carrots, sliced
  • 10 oz. pkg. frozen asparagus or chopped spinach
  • 1/2 c. rice

Directions

    Melt butter in a saucepan.

    Add all ingredients, except asparagus/spinach.

    Cook for 15 minutes.

    Add asparagus/spinach; stir well.

    Take off heat.

    Serve.
