Ingredients
- 2 cups potatoes, peeled, cooked and mashed
- 1 medium onion
- 12 fresh bell pepper (red or yellow)
- 3 -4 tablespoons salsa (mild to hot)
- 6 taco shells, ready-made*
- 12 cup cheddar cheese, sharp
- shredded lettuce (optional)
- 14 cup sour cream
Directions

1After prep and cooking of potaotes, put aside but keep warm.

2Slice onions into rings, then into halves.

3Place into a pre-heated pan that is coated with oil.

4Cook until lightly golden.

5Add thinly sliced pepper to onions and continue cooking until pepper is softened.

6Combine onion/pepper mixture with potatoes.

7Fold in the salsa and fill shells.

8Top with cheese, lettuce and our cream.
