Squash Au Gratin

- 1 to 2 lb. can yellow squash
- 1/2 c. chopped onion
- 1/2 c. mayonnaise
- 1 c. grated Cheddar cheese
- 1 egg, beaten
- 1/2 c. water chestnuts
- 1/2 stick butter
- 1/2 c. chopped bell pepper
- Waverly cracker crumbs
- 1 tsp. sugar
- salt and pepper to taste
Directions

1Wash and cook squash in salted water.

2Drain and mash.

3Saute onion, bell pepper and chestnuts in butter.

4Combine cheese, squash, sugar, mayonnaise and egg.

5Season with salt and pepper. Pour into greased casserole dish.

6Top with crackers.

7Cook for 30 minutes at 300°.
