Squash Au Gratin

  • 1 to 2 lb. can yellow squash
  • 1/2 c. chopped onion
  • 1/2 c. mayonnaise
  • 1 c. grated Cheddar cheese
  • 1 egg, beaten
  • 1/2 c. water chestnuts
  • 1/2 stick butter
  • 1/2 c. chopped bell pepper
  • Waverly cracker crumbs
  • 1 tsp. sugar
  • salt and pepper to taste

Directions

    Wash and cook squash in salted water.

    Drain and mash.

    Saute onion, bell pepper and chestnuts in butter.

    Combine cheese, squash, sugar, mayonnaise and egg.

    Season with salt and pepper. Pour into greased casserole dish.

    Top with crackers.

    Cook for 30 minutes at 300°.
