- 1/2 lb. ground round
- 1/2 c. onion, chopped
- 2 c. yellow squash, chopped
- 1/2 c. bell pepper, chopped
- 2 c. water
- 1 c. raw brown rice
- 1 can Campbell's Healthy Request cream of mushroom soup
- 1 tsp. salt
Directions

1Brown beef, onion and pepper; drain well.

2Add raw squash and 1 cup water.

3Simmer for 15 minutes.

4Add rice, soup, salt and the other cup of water.

5Stir well and pour into a 9 x 9-inch casserole.

6Bake at 350° for 1 hour.

7Serves 6 with 250 calories and 6 grams fat.
